Grilled Panzanella Salad

SERVES: 4-6

INGREDIENTS
  • 2 tablespoons red wine vinegar

  • 2 tablespoons extra virgin olive oil

  • 1 pint cherry/grape tomatoes, halved

  • good, crusty Italian bread, cut into 6-8 1-inch slices

  • bell peppers, diced into bite-sized pieces

  • 1/2 red onion, thinly sliced

  • 8 ounces feta, cubed into 1/2-inch pieces

  • Kosher salt, to season

  • fresh herbs (oregano, basil, whatever you love), to garnish as desired

DIRECTIONS

Marinate the tomatoes: Add the tomatoes to a large bowl with the red wine vinegar, olive oil, and 1 teaspoon Kosher salt. Toss to combine and set aside to marinate while you grill the bread.

Grill the bread: Preheat the grill to medium-high heat. Once hot, place the sliced bread on the grates, over direct heat. Grill for 2-4 minutes per side, until crusty and charred as desired. Remove from the grill and set aside. Once cool enough to handle, dice the bread into 1/2-inch cubes.

Assemble the salad: Add the cubed grilled bread to the bowl with the tomatoes. Toss to combine, then let sit for a minute for the grilled bread to soak in the tomato-y dressing. Add in the bell peppers, onion, & feta. Toss to combine.

Taste and season additionally with Kosher salt as needed. Finish with a handful of your favorite fresh herbs, & serve. Enjoy!
