Jack-o’-Lantern Stuffed Bell Peppers

INGREDIENTS
  • 4 orange bell peppers (you can also use red or yellow ones)

  • 300 g (10 oz) ground meat (beef, chicken, or plant-based)

  • 1 cup cooked rice

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 tomato, diced (or ½ cup tomato sauce)

  • 1 grated carrot (optional)

  • ½ cup sweet corn

  • 1 tsp paprika

  • ½ tsp cumin

  • Salt and pepper to taste

  • Grated cheese (mozzarella or cheddar)

  • Olive oil

Cut off the tops (like a pumpkin lid) and remove the seeds and membranes. Using a small knife, carve Jack-o'-Lantern faces (eyes, nose, mouth) into each pepper.

Make the filling: Heat olive oil in a pan and sauté the onion and garlic until soft. Add the ground meat and cook until browned. Stir in the tomato, spices, carrot, and corn. Cook for a few more minutes, then mix in the cooked rice. Season with salt and pepper.

Fill each pepper with the rice mixture. Top with some grated cheese. Replace the “lid” of each pepper.

Preheat the oven to 180°C (350°F). Place the peppers on a baking tray and bake for 25–30 minutes, until the peppers are tender and the cheese is melted.
