Bruschetta with bell peppers and cream cheese

SERVES: 6

INGREDIENTS
  • Colored sweet bell peppers

  • 3-4 tbsp olive oil

  • 2 cloves garlic

  • 60-70 ml water

  • 1/2 tsp salt

  • 1 tbsp sugar

  • 1/2 tsp ginger

  • 3-4 tbsp white wine vinegar or apple cider vinegar

  • ciabatta

  • cream cheese

  • mozzarella

  • alfafa

  • sesame

DIRECTIONS

Slice the peppers into straws.

Heat olive oil in a frying pan, add garlic (crushed or finely chopped) and pepper.

Roast for 3-4 minutes (making sure the garlic doesn't burn).

Add water, cover with a lid and cook for another 15 minutes on medium heat (add a little more water if necessary).

Remove the lid, add salt, sugar, ginger and vinegar and cook for another 2-3 minutes.

Remove from the heat and let cool.

Fry the ciabatta until golden (splash a little olive oil), smear with cream cheese, add mozzarella, top with peppers and sprinkle with alfalfa and sesame
