Halloween Pepper Salad

SERVES: 4

INGREDIENTS
  • 4 large bell peppers

  • 1 cup chickpeas, rinsed, drained

  • 1/2 cup black beans, rinsed, drained

  • 10.8-ounce greens

DIRECTIONS

Cut the top off the peppers; remove the core and seeds, keeping pepper intact.

Carve a mouth and eyes into one side of the pepper to make a spooky Halloween salad.

Place the greens into a large bowl; toss with the salad dressing. Add the toppings, chickpeas, and black beans; toss to combine.

Fill the peppers with the salad.
